Description: The Private Collection of Carmel Winery fulfils the dream of the late Baron Edmund de Rothschild, founder of the Carmel Winery in 1882. Private Collection series of Carmel Winery, in production since the 1980's, is a household name in Israel. Over the years, these wines have been consistently acclaimed for their high quality and value for money, and were recently awarded Gold Medals in the national "Best Value" competition. This established, high quality series consists of varietal and non-varietal wines, produced from grapes grown in vineyards in several growing regions in Israel. The Private Collection red wines possess a complex but balanced character, and the white is refreshing, with high and well-structured acidity. This series of wines is renowned for its accessibility, freshness and food pairing qualities.

"With the Cabernet Sauvignon the rule of thumb is generally ‘hardy,’ ‘substantial,’ and ‘fun.’ Consider something like Pan Fried Meatballs prepared with pignoli nuts and raisins served in a fresh tomato sauce.
